Believe it or not agave syrup is sweeter than sugar!

Agave syrup, or agave nectar, is a naturally occurring sweetener from the agave plant of which there are many species. To make agave syrup, the leaves are removed and a hole is made in the core of the plant to collect the juice which is then filtered and heated. 

Agave syrup is similar in consistency to honey but slightly thinner and is easily dissolvable, meaning it’s well suited for cocktails and smoothies. It’s often used in place of honey or golden syrup but has a thinner consistency.

It’s made up of fructose and glucose, meaning it has a much lower glycemic index than conventional granulated sugar (sucrose). 

Agave gets stronger in flavour the darker it gets in colour.
